Well, poppy seed chicken is very easy, not terribly classy, but extremely delicious (it is Matthew Stafford's favorite dish, if you want to attach that to it to make it even more intriguing). I'd say it's good picnic fare.
-6 breasts of chicken (or 4, maybe?) -1 can of cream of mushroom (not the low fat stuff) -1 can of cream of mushroom (not the low fat stuff) -1 16-oz. tub of sour cream (bring on the fat) -1 stick of butter (melted) -2 tsp. poppy seeds -1 sleeve of Ritz crackers (crushed)
-Boil the chicken for 15-20 minutes, till cooked. Shred it with two forks. -Put the chicken in a greased casserole dish. -Mix the soups and the sour cream. -Spread the mixture over the chicken. -Sprinkle the poppy seeds over it all, and then make another layer with the Ritz crackers. -Drizzle the butter over the whole thing. Bake for 25 minutes at 350, uncovered.
MMM, both very good suggestions. I might go with the spaghetti salad, since I am at work all day before the picnic and it needs to be made the night before.
I keep changing my mind depending on my mood (or what food is in front of me at the time)

Oh yeah - on the butter - real, genuine, bona fide butter, not margarine, not imitation butter...BUTTER.
